Merguez Spice
Yield: Approximately 8 tablespoons
Ingredients
- 1 tablespoon plus 1½ teaspoons paprika
- 1 tablespoon ground cinnamon
- 1 tablespoon ground allspice
- 1 tablespoon plus 1½ teaspoons ground cumin
- 1 tablespoon ground coriander
- 1 tablespoon plus 1½ teaspoons ground fennel
- ¼ - ½ teaspoon ground cayenne – to suit your taste
- 4 medium garlic cloves, minced
Directions
Mix the dry spices together. Add the minced garlic just before using the spice mix.
